Summer Veggie Sandwich

Oh, summer. I love you. Patio parties, BBQs, warm evening walks. And swimsuits. Don’t dread swimsuits! Use them as encouragement to eat all this bountiful seasonal produce. And despite what certain folks may may say, you do not need steak, chicken, fish or egg whites at every single meal in order to get lean. Vegetables, though? They are your friend. Or I should say, they want to be your friend. Desperately. Your body wants to be friends with them, too. Really.

Vegetables don’t have to be boring, bland, rabbit food. You want proof? I got your proof right here.

Summer Veggie Sandwich with Raspberry-Wasabi Mustard

*Nearly identical to the ‘wich I had in Missoula, MT that one summer ages ago that I haven’t been able to stop talking about and nearly driving my husband crazy by whining about every other sandwich I’ve eaten since. He calls this “The Nightmare is Over She’s Done talking About it Sandwich.”

The Sandwich:

  • 2 slices Great Harvest Dakota (Dave’s Killer is an awesome choice, too)
  • tomato
  • bell pepper
  • cucumber
  • pickled red onions (see recipe)
  • feta
  • hummus
  • pepperoncini

For the Pickled Onions

  • apple cider viegar
  • 1-2 red onions

For the Raspberry-Wasabi Mustard

  • ground mustard seeds
  • tumeric
  • mustard powder
  • powdered Wasabi (use carefully, sparingly, and taste as you go. This stuff is brutal and will hurt you.)
  • raspberry vinegar
  • raspberry jam (I like seeds. But I’m weird like that. If you don’t, buy seedless. Easy.)
  • Mayo

I found both the red raspberry vinegar and wasabi powder at Safeway. Score.
