Whole-Grain Berry Coffee Cake

For your Sunday brunch. Or anytime you want coffee and cake, really. Within reason, of course. It’s still coffee cake.

Whole-Grain Mixed Berry Coffee Cake

2.5c Trader Joe’s (or other, like Kodiak) whole-grain pancake/waffle mix

1/2c sugar

1.5c berries (I used a mix of marionberries, blueberries, and strawberries)

1 egg

3 Tbs oil

1c buttermilk

Preheat oven to 350.

Mix sugar and pancake mix. Whisk together buttermilk, egg, and oil. Stir gently into sugar and cake mix, just until moistened. Do not over-stir. This is crumbly coffee cake, not taffy. Fold in berries.

Spread into parchment-lined 9×9 cake pan.

Bake for 45-50 minutes.

Makes 12-16 servings

Pair 1 square with a hard-boiled egg. Pat yourself on the back for being so nutrition-savvy.
